It is predicted that, as more and more people learn about the health and environmental benefits of a plant-based diet, falafels--those vegetarian "meatballs" made from chick peas, onions, herbs, and spices--may become the hamburgers of the 21st century. During the month of January, says Justin Goldman, manager of Park Falafel & Pizza, "anyone who wants to try a falafel sandwich will have the opportunity to enjoy one for free.
