Being a Chef in the Time of COVID
Some restaurants in Hudson are struggling to survive during this health emergency by offering takeout. To support this effort, Gossips created and is maintaining the "Hudson Dining Guide" to help people find out how they can patronize their favorite restaurants. Other restaurants in Hudson closed on March 16 and remain closed. The chefs from two of those restaurants--Jaime Parry of Swoon and John Carr of Le Perche--are now cooking for an entirely new group of people in the Columbia County Recovery Kitchen.
Conceptualized and organized by Carole Clark, the chef and proprietor of the fondly remembered Charleston, once located at 517 Warren Street, the Recovery Kitchen provides food to people in need in the county, with a focus on the particularly vulnerable immigrant communities. Carol Peckham reported about this emergency kitchen on her blog Food in the Time of Corona: "Top Chefs in a Pop-up Soup Kitchen."

This is absolutely wonderful. I hope Carole et al are checking in with DSS, the Salvation Army, and HCSD (the school district) to coordinate with their food delivery operations.
ReplyDeleteCarole Clark has been a loving and beneficial force in this community for a long time. I'm happy to know she's still "cookin' with gas."
